Direct pressed, settled and clean to barrel. Stirring of lees ("battonnage") every other week during MLF, to build some body and soften some edges. No sulfure at crush. Unfined and unfiltered. A beautiful food wine: Notes of lemon/lime zest and stone fruits, with a zippy acidity to cleanse the pallet. Perfect with poultry, Thai food, seafood, and truffle french fries.
